Akiko
I am always on the lookout for delicious food, all while managing the hectic family life. I often lose track of time when looking for recipes. If I eat anything, it should be delicious.
That’s how I was until, to my shock, I discovered that I was gluten intolerant and couldn’t eat anything that contained wheat or barley. But I don’t want to give up eating great flavors for the rest of my life.
So I struggled every day to find a way to replace wheat with rice flour and other ingredients to continue eating the foods I love.
That’s when I discovered that although there are many gluten-free ingredients in America, there are still fewer gluten-free Japanese food ingredients. So I struggled and am still struggling.
Based on this experience, I started GlutenFreeJapanese.com to share the knowledge and information I have gained with Japanese people living in the U.S. who are gluten intolerant or allergic to wheat.
I aim to provide easy, delicious, and gluten-free Japanese food information (not just traditional Japanese cuisine but all Japanese food) in America!
I live in the San Francisco Bay Area (Silicon Valley) and am originally from Tokyo.
I came to the U.S. for graduate school and liked it so much that I decided to stay. I am a US-certified public accountant (CPA) and have a family of three.
